Ingredients:
- 1 lb (450g) chicken breast, cut into bite-sized pieces
- 1/2 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 cups broccoli florets
- 1 carrot, sliced
- 2 tablespoons vegetable oil
- Cooked rice for serving
Steps:
- Prepare the Ingredients: Cut the chicken into bite-sized pieces, mince the garlic and ginger, and chop the vegetables. Arrange all ingredients neatly and ready to cook.
- Make the Teriyaki Sauce: In a small bowl, whisk together the soy sauce, honey, rice vinegar, and cornstarch mixture. Set aside.
- Cook the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken pieces, season with salt and black pepper, and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
- Cook the Vegetables: In the same skillet, add the broccoli florets and sliced carrot. Stir-fry until tender-crisp, about 3-4 minutes.
- Combine Everything: Add the minced garlic and ginger to the skillet, sauté until fragrant, about 1 minute. Add the teriyaki sauce and cooked chicken, tossing everything together until well combined and heated through.
- Serve: Serve the teriyaki chicken and vegetables over cooked rice. Enjoy!
